Remove specific tags from a model.
Args:
- model_id: required
- tags: required — array of tag names to remove
- team_id, project_id: required for OAuth callers
Returns: the updated tag state from the API.
Example: "Remove the 'draft' tag" -> model_id="model_xxx", tags=["draft"]
